Creamy garlic and herb dressing

Start by taking a really fat clove of garlic and mashing it up in a pestle and mortar with a good pinch of coarse sea salt until a smooth paste is formed.
Add the garlic to a larger bowl with a good pinch of cracked black pepper, cider vinegar and olive oil.
Add mayonnaise into the bowl and whisk until a smooth emulsion is formed.
Finely chop some fresh herbs like thyme, marjoram and parsley and stir into the dressing.
