Root vegetable and cider stew

Too many root vegetables? Transform them into this hearty root vegetable and cider stew!
Preheat the oven to 180°c or gas mark 4.
In a large casserole dish, fry shallots in olive oil until golden.
Add garlic and leek, fry for a couple more minutes then add swede, carrots and potatoes and stir well.
Add the cider and bring to the boil.
Add stock, plus soy sauce, bay leaves and sage.
Put the casserole dish in the oven and cook for 1 hour or until all vegetables are soft.
Season to taste and finish with chopped parsley.
